Next year in April we are travelling by train to the South of France via Toulouse, we would like to see the French Pyrenee Mountains and were wondering if they can be seen from Toulouse? We have 3 days in Toulouse and could hire a car if that is easier to travel to see the mountains.

Yes, but sort of in the distance as they are around 90 miles/145km away.
You can take a train from Toulouse to La Tour de Carol, which is on the border between France and Spain and therefore pretty well right up in the mountains but for a more thorough exploration a car would be a good idea.
The trains run about every 2 hours and take about 2 hours, driving it would be a bit quicker.
