I understand that I must transfer from the TGV station in Tours to the main station to take another train or bus to Chinon. Is that right? One way or the other, how often is there transport to Chinon and do you have advice?

Most TGVs stop at St Pierre des Corps (the mainline station in the suburbs of Tours), and then continue further south. A few TGVs do go on to Tours Centre, which is a terminus. In the case of the former, there is a free shuttle train from St Pierre des Corps to Tours Centre.
The trains to Chinon leave from Tours Centre. I just did a quick search on the SNCF website http://www.voyages-sncf.com/ and, picking a weekday next week, found that there were ten trains in the day to Chinon.

There are also a few buses daily between Tours and Chinon but they take a bit longer than the train. If you arrange your arrival in Tours to coincide with the departure of a Chinon train you probably don%26#39;t have to worry about the bus, though it would allow you to see a bit more of the scenery than the train would.
If you through-book your trip on voyages-sncf.com or tgv-europe.com the site will automatically select the best combination of TGV from Paris and Ter (regional train) from Tours. (Do not use raileurope.com as they add a hefty and unnecessary premium.) You will also get the lowest fare by booking this as one trip. Advance purchase PREMs fares from Paris to Chinon should be around €25 and the trip should take perhaps a bit more than 2 hours with a reasonably quick transfer in Tours. Note that PREMs tickets are non-refundable.
