I am planning to take a vaction around a year from now, and I was looking for some advice. Like to spend about 21 days including flight. Looking to free travel with the euro rail. Like to visit the most places we can to get an great overall experience of Europe. On a budget since having to save for a few years. Any advice?

I just wanted to add that in your list of countries you forgot the Czech Republic where Prague is one of the most favourite cities in all of Europe, as you can see by the many entries in the Prague forum.

18-19 days = at the most three or four cities, especially in October/November when days are short and the weather questionable.
These days point-to-point tickets usually work out to be less expensive than rail passes. Night trains are not nearly as common today as they were a few years ago. Budget airlines are often cheaper and usually quicker than trains over any significant distance. However you decide to do this remember that every time you move from one place to another you will lose most of a day.
